I met recently with Harold Agpoon, Aaron Soh and Jason Koh owners of The Old South Thirroul and asked them some questions about their tapas bar/restaurant established 9 months in Thirroul.

Business name & how did it come about? The Old South name was born from the idea of showcasing the old and new of Thirroul using the old Black and White photos left from previous cafe owners and our modern day prints.

How did your business partnership establish? We have been friends for a very long time, both Aaron and I have always worked in hospitality and previously worked at two other venues together. Aaron and I became good friends with Jason since meeting him through his brother, who was working with us at the time.

Harold’s background? I worked in a number of Hospitality venues in Senior Management roles from, fine dining restaurants, International Hotel and licensed clubs. Pretty much every food and beverage operation possible except resorts and theme parks.

Aaron’s background? I have been in the hospitality industry for 18 years, working in a variety of establishments from night clubs, hotels, restaurants, cafes and clubs… pretty much done it all except for airlines and cruise ships!

Jason’s background? I’m a qualified shop-fitter by trade and worked over 10 years in the joinery industry installing kitchens and wardrobes mostly in residential and high rise apartments all over Sydney, Wollongong and the Central Coast.

What inspired you to start this business? We have always wanted to create space that we could call our own. A venue that we would enjoy visiting. A lot of our dishes and drinks are influenced by what we enjoy personally.

Best describe your business? Small neighbourhood tapas bar and restaurant utilising a Mibrasa charcoal oven to showcase the quality of produce.

Summary: An extensive list of cocktails, wines and spirits matches with a seasonal food menu that is influenced by the method of cooking on charcoal.
